Ingredients: ⠀
1 large head cauliflower, cut into bite-size florets ⠀
1 cup of breadcrumbs⠀

Cheese sauce ingredients:⠀
1 cup raw cashews, soaked in hot water ⠀
2 cups soy milk, unsweetened ⠀
1 cup vegetable broth ⠀
4 Tbsps. lemon juice ⠀
1 ¼ Tsp salt ⠀
4 garlic cloves, minced ⠀
1 onion, diced⠀
2 tablespoons vegan butter ⠀
2 Tsp Neema Sweet & Spicy Chilli Paste ⠀

Instructions: ⠀

1) Preheat the oven to 200 C. Soak the cashews in hot water for 15 to 20 minutes, until soft. In a pan on medium heat add the butter, garlic and onion and sauté for five minutes. ⠀

2) To a pan on medium heat add boiling water. Then add the cauliflower and bring to a boil turning the heat to high. After it begins to boil turn the heat to low or medium heat and boil for 8 minutes or until tender. ⠀

3) Drain and rinse the cashews and place them in a blender with the rest of the cheese sauce ingredients. Blend until smooth for 1-2 minutes. Then pour the sauce into a pot on medium heat. Cook for 4-5 minutes. Stir continuously. If it's too thick, a little broth can be added.⠀

4) In a greased casserole dish pour half of the sauce in. Then add the cauliflower and top with the remaining sauce. Sprinkle with breadcrumbs and cover with foil. Cook for 15-20 minutes. After, remove the foil and bake for another 10 minutes. ⠀
