Cod, Tomato & Chickpea Curry


Easy homemade cod, tomato, and chickpea curry. Did you know that cod is a great low-fat source of protein? Or that it contains iodine which is important for thyroid function? Why not try out this delicious dinner tonight. Just serve alone or with your favourite rice.

Ingredients: ⠀
1 Tbsps. olive oil ⠀
1 onion, diced ⠀
2 Tbsps. curry powder ⠀
2 Tbsps. Neema Aromatic Ginger ⠀
800g canned chopped tomatoes ⠀
400g canned chickpeas ⠀
4 cod filets ⠀
½ lemon and zest ⠀
Handful of coriander, roughly chopped⠀
Salt to taste ⠀

Instructions: ⠀
1) In a large pan on medium heat, add the oil and sauté the onions for 2-3 minutes. Then stir in the Neema paste and curry powder. Leave to cook for 1-2 minutes. Then add the tomatoes, chickpeas, and salt. Cook for around 10-15 minutes until slightly thickened. ⠀
2) Add the cod in large chunks. Cover and cook for 5-10 minutes. ⠀
3) Add the lemon zest and juice. ⠀
4) Top with coriander and serve. ⠀
