1. Use a well-seasoned cast-iron pan to stop your eggs from going crusty on the bottom of the pan.⠀
2. Use fully cooked leftovers to stop any moisture from being released in the eggs and watering them down.⠀
3. Don't overbake. A good frittata should have the texture of custard!⠀
