GRILLED POTATO WITH MUSHROOMS & CORN ⠀
Want the perfect excuse to fire up the BBQ? Look no further. This recipe can be made by using the BBQ to grill the potatoes to perfection.
1) Heat the BBQ ready on medium to high heat. Then wash and pierce the potatoes using a fork and lightly oil. Individually wrap each potato in aluminium foil, and place them on the grill for 40-45, rotating and flipping every 15 minutes. After it's cooked leave to cool slightly. ⠀

4 Potatoes ⠀
350g Mushrooms, diced ⠀
1 onion, diced ⠀
200g sweetcorn (canned)⠀
150g cheese, grated ⠀
Parsley, roughly chopped ⠀
2 Tbsp. Neema Sweet & Spicy ⠀
Salt to taste ⠀
4 Tbsp olive oil ⠀
2) Into a BBQ safe skillet, add oil and the onions and saute for 2-3 minutes. Then add the sweetcorn and cook for 6-8 minutes. Add the mushrooms, Neema chilli paste and salt. Cook this for around the same time as the sweetcorn. ⠀
3) Stuff the potatoes with the filling, then sprinkle with cheese and parsley. Place the stuffed potatoes into the skillet and cover with tin foil. Then place back on the BBQ for 5-6 minutes for the cheese to melt. ⠀
Leave to slightly cook & enjoy.
