Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 Tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
300g okra, tops removed ⠀⠀⠀⠀⠀⠀⠀⠀⠀
50g peas ⠀⠀⠀⠀⠀⠀⠀⠀⠀
50g snow peas ⠀⠀⠀⠀⠀⠀⠀⠀⠀
120g baby corn ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can tomatoes, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cloves garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
2tsp ground cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
3tsp ground coriander⠀⠀⠀⠀⠀⠀⠀⠀⠀
1tsp turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 bay leaves ⠀⠀⠀⠀⠀⠀⠀⠀⠀
250ml coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
salt to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 Tsp Neema Aromatic Ginger Chilli Paste⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1) Add oil to a large pot on medium heat. Then saute the onions and garlic for 3-5 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2) Add the ground spices, turmeric, Neema paste and salt. Stir well and cook for a further minute. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3) Put in the chopped okra, corn and tomatoes, stirring well to combine. Then add some water and coconut milk. Stir and bring to a simmer for 15 minutes. Add the peas and cook for a further 10 minutes. Adjust the seasoning as necessary. Serve with rice and enjoy.
