One-Pot Pumpkin & Lentil Stew


Save up on the washing up and make this delicious warming stew. Ready in no time at all. It's October after all so why not incorporate some pumpkin into your meals.

Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tsp cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can crushed tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.5 cups vegetable broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 cups cubed pumpkin⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup lentils, rinsed⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup sundried tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup shredded chicken⠀⠀⠀⠀⠀⠀⠀⠀⠀
A handful of roughly chopped cashews⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
A handful of basil leaves⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Tbsp Neema Aromatic Ginger and Scotch Bonnet Chilli Paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1) To a pan on medium heat add the oil and saute the onions for 2-3 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2) Next add in all the spices and Neema paste and stir for 1-2 minutes until fragrant.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3) Then add the tomato can, sun-dried tomatoes, pumpkin, some salt and the lentils. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the pumpkin and lentils are fully cooked.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4) Top with fresh basil, chicken and cashews. Enjoy!
