Spicy Homemade Broccoli Pesto Pasta


Today we present our homemade broccoli pesto pasta and trust me you wont regret making your own pesto instead of using the store bought ones.

450 grams of cooked pasta of your choice 
284 grams of broccoli florets
40 grams of basil 
2 garlic cloves
34 grams of pine nuts
213 grams of extra virgin olive oil
½ tsp of salt
89 grams of grated parmigiano
1 tsp of Neema sweet & spicy chilli paste

Method:

  1. In a large pot bring water to a rapid boil.

  2. Add the broccoli, bring the water back up to a boil for two minutes. Do not drain the water! Immediately transfer broccoli (with a slotted spoon) to a colander place under cold running water to stop further cooking.

  3. Bring the water back to a boil, add salt and add your pasta and cook according to the package. Make sure to keep 1 cup of pasta cooking water before draining.

  4. In a large blender or food processor, blend together broccoli, basil, garlic, pine nuts, sweet & spicy chilli paste, olive oil, salt and Parmigiano until smooth. Slowly pour in 1 cup of the pasta water until a nice sauce is formed. If the sauce is too thick, add more pasta water one tablespoon at a time.

  5. Toss hot pasta with sauce until completely coated.
