Steak Pie With An African Twist

3 Tbsp. olive oil ⠀
1kg braising steak, diced ⠀
2 onions, chopped ⠀
4 Tbsp. plain flour ⠀
1 Tbsp. Fruity and Fiery Scotch Bonnet Chilli Paste⠀
2 beef stock cubes mixed with 600ml boiling water ⠀
1 Tbsp. curry powder⠀
1 Tsp. thyme⠀
375g sheet of ready-rolled puff pastry ⠀
1 egg yolk ⠀
3 large carrots, diced ⠀
3 potatoes, diced ⠀

Instructions: ⠀
1: Preheat the oven to 150 C. Heat the oil in a large pan on medium heat. Add in the onion's and sauté for 2 minutes. Then add the meat and brown for 3 minutes and after set aside. ⠀

2: Then add the flour and stir in until flour is cooked or browned. Then add the chilli paste, stock and seasons. Then add the potatoes and carrots and mix in. Then pour the filling into a pie dish and cook in the oven for roughly two hours. This is until the meat and vegetables are tender. ⠀

3: Take out the dish. Then tip the filling into another pie dish and brush the rim with yolk. Drape the pastry over the dish and use a knife to trim and press the pastry to the edge of the dish. Re-roll the trimmings to make a rope decoration. Brush with yolk and add the rope to the edge rim. then make a few slits in the centre and bake for 40 minutes. ⠀
