We absolutely love this recipe for our stuffed butternut squash. It’s made with our Fruity and Fiery chilli paste, butternut squash, bell peppers, red onions, carrots, and quinoa!!

Ingredients:
1 butternut squash, cut in half and deseeded ⠀
3 garlic cloves, diced ⠀
1 red bell pepper, diced ⠀
1 red onion, diced ⠀
2 carrots, diced into large chunks ⠀
300g of quinoa, rinsed ⠀
2 Tbsp. olive oil ⠀
600g water ⠀
Salt to taste ⠀
1 Tbsp. Neema Fruity and Fiery Chilli paste ⠀
Instructions:
1. Preheat the oven to 200 C. Brush the squash with olive oil and roast in the oven for 40-50 minutes until tender. ⠀
2. In a pan on medium heat, add the onions, garlic and bell pepper and sauté for 5 minutes. ⠀
3. Then add the boiling water to a pan on medium heat. To his add a pinch of salt. ⠀
4. Then add the carrots and quinoa to a different pan on high. Cook for 10 minutes and remove the carrots. After cook further until all water has been absorbed on medium to low heat.⠀
5. Take the squash out of the oven and scoop out some in cubes, making a well for the stuffing. ⠀
6. Next combine all the vegetables, salt and chilli paste in one pan and cook for a further 2 minutes. Then spoon the stuffing into the squash and bake in oven for 10-15 minutes. ⠀
