Ingredients:
2 large plantain ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 green bell pepper, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
450g minced ground beef ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 onion, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove of garlic, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Tbsp olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
50g tomato paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Tsp Neema sweet and spicy green chilli paste
Method:
1) Preheat the oven to 250 C, and line a baking tray with baking paper and oil.⠀⠀⠀⠀⠀
2) Peel the plantain and remove the skin. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3) Place plantains on the tray and lightly spray with oil. Bake for 15 minutes on each side.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4) While the plantains are baking, add some oil to a pan on medium heat, followed by onions, garlic and tomato paste. Let this cook/simmer for 8-10 minutes, Add some water if needed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5) Then, add the meat salt and Neema paste and continue cooking for 10 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6) Finally, add the green pepper and cook for 5 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
7) Remove the baked plantains and make a slit horizontally. Then, stuff with the mixture and⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sprinkle with cheese,⠀⠀⠀⠀⠀⠀⠀⠀⠀
8) Place back in the oven and bake for 5 minutes. Serve and enjoy.
