Recipe:
400g Large sweet potatoes, diced ⠀
150g broccoli⠀
3 egg ⠀
40g cheese, grated ⠀
100g bread crumbs ⠀
Salt to taste ⠀
2 Tsp Neema Green Bullet Chilli Paste ⠀
4 Tbsp. olive oil ⠀
⠀
Instructions:
1) Fill a pan on medium heat with boiling water. Add the potatoes and cook for around 15 minutes until cooked through. Drain and mash. Then place pan on medium heat and cook for 2 minutes. ⠀

2) Meanwhile, bring water to a boil in a saucepan and simmer the broccoli for 5-8 minutes. Then drain and pat dry the broccoli to remove as much moisture as possible. Finely chop the broccoli, then add the mash, one egg yolk, cheese, salt and Neema paste. Shape into balls or sausage shapes and place in the freezer to chill for 10 minutes. ⠀

3) Take the croquettes and dip in the beaten egg. Then roll in the bread crumbs. Do this for all. ⠀

4) Heat the oil in a frying pan and fry the croquettes on low heat for 4-6 minutes. Turn frequently to cook all sides.
