Sweet Potato Fish Cakes

Ingredients: ⠀
400g cod or haddock fillet ⠀
150g milk ⠀
400g sweet potato ⠀
1 Tbsp parsley, chopped ⠀
1 Tbsp chives ⠀
1 egg ⠀
80g breadcrumbs ⠀
4 Tbsp olive oil ⠀
150ml water ⠀
2 Tsp Neema Aromatic Ginger ⠀
Salt ⠀
1Tbsp tartare sauce ⠀

Instructions: ⠀
1) Put the fillets into a frying pan on medium heat an pour in the milk and water. Bring to a boil and cook for 4 minutes. Then take of the heat, cover and leave to gently cook for 10 minutes. ⠀

2)Peel and chop the sweet potatoes. Put them into a saucepan and cover with boiling water. Add a pinch of salt and cook for 10 minutes or until tender. ⠀

3) Drain the potatoes and remove the fillets from the milky water. ⠀

4)Put the potatoes back into the pan on low heat and let them dry out for 1 minute. Then break up into a mash with a fork. ⠀

5) Into the pan add 1 Tbsp of tartare sauce, aromatic ginger, parsley, chives, chilli paste and salt to taste. Then add the fillets in flakes and mix gently to combine. ⠀

6) Mix up the egg in a bowl. Then put the bread crumbs onto a plate. ⠀

7) Shape the fish cakes, dip in egg and cover in breadcrumbs. Next chill for 30 minutes. ⠀

8) Into a pan on medium heat add two Tbsp of oil. Heat until hot. Fry the cakes for 5 minutes on each side. ENJOY! ⠀
