Ingredients: ⠀
2 onions, grated ⠀
3 cloves of garlic, minced ⠀
4 Tbsp. fresh coriander, chopped ⠀
800g sweet potato, peeled and grated ⠀
100g red lentils ⠀
2 Tsp curry powder ⠀
3 Tbsp. olive oil ⠀
1-1.2l of vegetable stock ⠀
300ml milk (any of choice) ⠀
Neema Aromatic Ginger Chilli Paste ⠀

Instructions: ⠀
Add the curry powder to a pot on medium heat and toast the powder for 2 minutes. Then add the oil, and milk until combined. After tip in the onion, garlic, Neema paste, coriander and season. Cook for 5 minutes stirring consistently. ⠀

Next add the potatoes into the same pan and add the milk, stock, lentils and some seasoning. Simmer for 20 minutes and blend until smooth. ⠀
