Tomato, Chickpea & Lentil Soup


Enjoy your weekend with this super simple tomato, chickpea, and lentil soup. ⠀

It’s so yummy, nutritious, and ready in just 20 minutes.  Made with Neema’s African Scotch Bonnet Chilli paste for added flavour!

Lentil soup serves: 6-8⠀

Ingredients:
1 tbsp. olive oil ⠀
1 medium onion, chopped ⠀
300g red lentils ⠀
46g tomatoes ⠀
½ can of chickpeas ⠀
1.5L boiling water ⠀
2 stock pots ⠀
2 tbsp. African Scotch Bonnet Chilli paste ⠀
2 tsp. cumin⠀

Directions:
Heat the oil and sauté the onions and tomatoes for 5 minutes. Then add the chickpeas, lentils, veg stock, water, and African Scotch Bonnet Chilli paste. Bring to a boil, then lower the heat and simmer for 20 minutes. Use a blender to blitz into a puree. ⠀

Serve with fresh coriander and enjoy!
