Vegetable Stew

Feeding our body with nutrients is so important for our short-term and long-term health. This recipe is easy to make and ready in under an hour. Just follow our simple recipe below!!

Ingredients: ⠀
2 potatoes, cubed ⠀
1 large aubergine, chopped ⠀
1 Tbsp. olive oil ⠀
1 large courgette, cubed ⠀
2 carrots, diced ⠀
2 Tsp. Neema Aromatic Ginger ⠀
2 Onions, diced ⠀
400g can tomatoes ⠀
Salt to taste ⠀

Instructions: ⠀
1. To a saucepan on high heat add boiling water and a pinch of salt. Then add potatoes and boil for 10 minutes. ⠀
2. In a separate pan on medium to high heat add oil. Then add the onions and sauté until cooked. ⠀
3. Add vegetables, tomatoes and Neema chilli paste and mix. Leave to cook for 10 to 15 minutes, stirring occasionally. Then add the potato and stir in. ⠀
4. Season with salt and leave to simmer for 5 minutes. ⠀
Plate and enjoy!!
