Veggie Stuffed Courgette Boats

Ingredients: ⠀
2 large courgettes, halved ⠀
Salt to taste ⠀
2 Tbsp. olive oil ⠀
1 onion, diced ⠀
2 cloves of garlic, minced ⠀
2 Tsp. of Fruity and Fiery Scotch Bonnet Chilli Paste ⠀
1/2 Tsp. ground cumin ⠀
1/2 cup of corn ⠀
1/2 cup of tomatoes, diced ⠀
1 bell pepper, diced ⠀
1/4 cup of olives, diced ⠀
1/2 cup of vegan cheese, grated ⠀

Instructions:
Preheat the oven to 250 C. ⠀
Scoop out the insides of the courgettes. ⠀
Lightly oil the boats and place them in the oven to cook for 10-15 minutes or until baked. ⠀
Heat a large pan on medium heat. ⠀
Add 1 Tbsp. of oil and sauté onions. ⠀
Stir in garlic and cook. ⠀
Add in the corn and cook for 4 minutes. ⠀
Add the rest of the vegetables, the scotch bonnet chilli paste and salt to taste. ⠀
Take the mixture off the heat and mix in the cheese. ⠀
Spoon the mixture into the boats and sprinkle some cheese on top. ⠀
Bake for 12-15 minutes. ⠀
