Pilaf

Today we visit Kenya for our recipe today. Pilaf is a beautiful rice dish packed full of flavour.  Ingredients:350g chicken3 cups rice2 cups of coconut milk2 cups water3 Tbsp. olive oil1 large onion, diced4 cloves of garlic10 green cardamom pods8 cloves1 Tbsp cumin seeds1 Tbsp coriander seeds1 cinnamon stick1 bouillon cubeSalt to taste2 Tbsps. Neema Aromatic Ginger Chilli Paste Instructions: 1) Put a pan on medium heat and toast the spices. Toast the cinnamon stick, cardamom pods and cloves for 2-3 minutes. Then add the cumin and coriander seeds and toast for a further 1-2 minutes. BBQ Chicken Wings. Neema Style

Chicken wings are perfect for the summer. so here at neema food we have made a BBQ chicken wings recipe that you can sink your teeth in.   Ingredients:⠀ 1 kg chicken wings ⠀ 2 Tbsp. Aromatic Ginger & Scotch Bonnet Chilli Paste ⠀ ½ Tsp cumin powder⠀ 1 ½ Tsp salt⠀ 2 Tbsp vinegar⠀ 1 ½ Tbsp honey⠀ 1 Tbsp. olive oil & some for brushing⠀ ½ cup (100g) barbecue sauce⠀ Instructions:⠀ 1) Prep chicken wings by washing and cleaning them. ⠀ 2) Add Neema paste, cumin powder, salt, vinegar, honey, and oil to a mixing bowl. Yummy Spicy Meatballs

A delicious recipe for meatball lovers. Can be eaten alone, as a side dish or cooked in a yummy spaghetti meatball dish. Ingredients: ⠀500g of ground beef ⠀500g ground turkey⠀1 large egg ⠀2 Tsp. African Green Bullet Chilli ⠀1/2 cup grated ⠀2 Tbsp. olive oil ⠀1 Tsp. salt ⠀30g almond flour ⠀1 small onion, diced ⠀⠀Method: ⠀1. In a large bowl add all the ingredients apart from the oil and mix thoroughly. ⠀2. Shape the meatballs into desired size. ⠀3. Heat the oil on a pan to a medium heat.4) Cook the meatballs on all sides for a total of 15-20 minutes (around 4 minutes per side). ⠀Enjoy!⠀

Quinoa Salad with a Chilli Vinaigrette

A simple healthy salad recipe for those lazy evening when you don't want to spend too much time in the kitchen. Ingredients: Quinoa Salad: 85g quinoa 139ml water 1 avocado (pitted and diced) 385g baby spinach  64g red bell pepper (strips) 64g yellow bell pepper (strips) 64g cherry tomatoes (halved)   Chilli vinaigrette: 118ml extra-virgin olive oil 118ml lime juice 1 tablespoon honey 4 cloves fresh garlic (pressed) 2 teaspoons of Neema Green Chilli Paste 1/2-1 teaspoon salt 1 teaspoon ground cumin   Directions: Chilli vinaigrette: Place olive oil, lime juice, honey, garlic, cumin, salt, and the African green bullet chilli paste into a mason jar, blender, or food processor. Curried Chilli Chickpea Jacket Sweet Potatoes

  Serves 2 - 3 people  Ingredients: ⠀ 1 can of chickpeas – drained and rinsed ⠀ 1/2 can of tomato passata (or chopped tinned tomatoes) ⠀ 1/2 can of coconut milk ⠀ 1 onion – finely chopped 2tsp of Neema Aromatic Ginger & Scotch Chilli Paste⠀ 1tsp of turmeric powder ⠀ 1tsp of curry powder ⠀ Salt & seasoning to taste ⠀ Olive oil ⠀ 2-3 sweet potatoes ⠀ Serve with: ⠀ Coconut yoghurt ⠀ A sprinkle of chopped coriander or arugula ⠀ Method: ⠀ Sweet potatoes:⠀ Preheat the oven to 180 (fan oven).
